Mango Chow Salad via The Best Dressed Plate !


Mango Chow:

Peel and cut mango in any shape either small squares or julian

Chop finely 2 springs of Cilantro

Chop finely 1/3 of red onion

Chop finely 3 pimento pepper

1/3 tablespoon of salt

1/2 tablespoon of fresh cracked black pepper

Add table spoon of favorite pepper sauce

Squeeze 1 lime

Place all ingredients into a bowl and stir lightly

Breadfruit Croutons

Roast Breadfruit until the skin is black.

Peel skin off breadfruit and cut into square chunks and set aside

Sauté 2 tablespoons of coconut oil mixed with 1/2 stick of butter in sauce pan

Minced 2 cloves of garlic and add to oil and butter

1/3 tablespoon of salt

1/2 tablespoon of fresh cracked black pepper

Allow all ingredients to sauté for approximately 5 minutes on medium-low heat

Place breadfruit chunks on cookie sheet

Coat breadfruit chunks with seasoned oil with a brush

Heat oven at 350 and bake breadfruit in cookie sheet for 10 minutes

Remove from oven and sprinkle parmesan cheese on breadfruit and place back in over for another 5 minutes.

Remove from oven and allow to cool and serve

Salad

Slice onion in a round shape

Clean lettuce by running water over the lettuce in a strainer

place lettuce on the bottom of plate and add onion and mango chow, breadfruit croutons and finish with chunks of avocado.

Squeeze fresh lime over avocado to reduce darkening of the fruit.
